The game starts out with a tutorial level that teaches you how to play and all the basic rules. At the beginning of every level there is a chalkboard that tells you what your goal is for amount of money earned, in addition to the expert amount of money. In most cases the goal is fairly easy to reach but the expert, as implied, takes a little more skill and often times requires you to get multiple chain bonuses. To get chain bonuses you have to perform the same action at least two times in a row. For example if you clear 2 tables in a row, you get a time 2 multipler which gives you twice a many points.

After you have beat all the levels at a single restaurant, it unlocks the next restaurant. Although, with the new update to Diner Dash there are 3 other restaurants, Romantic Rendezvous, Spooky Salon, and Winter Wonderland,  that you can purchase for .99c and they all have 10 additional levels and various new characters.
